Grandma's potato chip cookies
I didn't come up with this one, but it's probably the best recipe in our family.
Ingredients
- 1 cup of butter or margarine (2 sticks)
- 1.75 cups of flour
- 1 cup of crushed potato chips
- 0.5 cups of sugar
- 1 tsp vanilla

- Oven
- Rack
- Spoon
- Wooden spoon
Procedure
Preheat the oven to 350°F. Place the potato chips (we usually use Lay's) in a Ziploc bag and pound them with something until they're ground into pebble-sized pieces. A wooden meat mallet works well. Continue until you have a cup of chip fragments.
Beat the butter until soft, then add the sugar and vanilla and beat until fluffy. Gradually add the flour and chips and mix until well-blended. Drop rounded teaspoons of dough onto the sheet, ungreased, about 2" apart. Gently press down on the little dough balls with a fork dipped in sugar. Bake them for 12-15 minutes or until lightly browned on the bottom, then put them on the rack to cool.
This yields 36 delicious cookies.
