Awesome grilled cheese
Ingredients
- Two thin slices of American cheese (from the deli or something, not that "Kraft Singles" garbage)
- Butter (not margarine or other oil-based substitutes)
- Two slices of fresh white bread or wheat bread
- Shredded mozzarella cheese
- Spicy brown mustard
Tools
- Small non-stick frying pan
- Spatula
- Stove
Procedure
Spread a thorough covering of butter on one slice of bread. Place the slice butter side down on the frying pan, and place a slice of American cheese on top of it. Evenly sprinkle some shredded mozzarella cheese on top of that, and cover it with another slice of American cheese. Gently press down on it.
Butter the other slice of bread, then spread a thin coating of spicy brown mustard on the other side. Don't use the same knife, that's gross. Place it butter side up on top of the cheese. Turn on the stove to a low-medium heat (30-40%) and let it cook for a couple minutes, while gently pressing down along the edges of the top slice.
Periodically check the status of the lower slice by lifting a corner off the pan with the spatula. Once it's moderately browned, it's time to flip it over. The looseness of the mozzarella can make this a tricky operation, so be quick, decisive, and above all, stay low.
Once you've flipped it over, you may want to realign the bread slices if they've become slightly offset. Apply a firm, even downward pressure with the spatula, but try not to buckle the crust of the lower slice. This side will cook much faster than the other side, so keep a close eye on it. Again, lift a corner off the pan periodically to check its status.
When the other side is moderately browned, turn off the stove and let it cool for 30 seconds or so before consuming.
Awesome alternative
Use seedless rye bread, and replace the cheeses with slices of provolone.
