French toast bites
Ingredients
- Butter (not margarine or other oil-based substitutes)
- Cinnamon
- Cooking oil
- Three slices of fresh white bread or wheat bread
- 1 tsp granulated sugar
- Maple syrup
- Powdered sugar
- Two raw eggs
- Vanilla extract
- 1 tbsp whole milk
Tools
- Small bowl
- Fork, preferably small
- Large non-stick frying pan
- Knife
- Spatula
- Stove
Procedure
Stack the slices of bread and cut them into quarters from the middles of the edges, not the corners.
Crack open the eggs into the bowl and beat them until the yolks and whites are thoroughly incorporated and not clumpy or stringy. This is what the fork is for. Quick lateral motions with the tines pointed downward seem to work best. Add the milk, the granulated sugar, a teaspoon of maple syrup, a drop of vanilla extract, and a shake of cinnamon, and mix until blended.
Set the stove to a medium heat (40-50%) and grease the pan with the butter, then pour in enough oil to cover the pan. Take a piece of the bread and dip it into the egg mixture on both sides, then put it in the pan. Repeat until all bread pieces are in the pan. You may have to shift them around a bit to get them all to fit.
Give the pan a shake to keep them from sticking together. They probably will anyway, so push the spatula between any connected pieces to cut them apart. The pieces near the center will cook faster, so keep an eye on those. Once a piece is golden brown on the bottom, it can be flipped. Once it's golden brown on the other side, it can be removed.
When all the pieces have finished cooking, dust them with powdered sugar and drizzle syrup over them. Let them cool for a minute or so before serving.
